| Mother (chicken) and child (egg) rice dish for dinner. Brown rice topped with leftover cooked chicken, eggs, soy sauce, sugar, chicken consommé powder, and water. Some leftover steamed veggies, too. |

Latkes and Fish
Sound boring? Not this one! I made scallion matzoh meal latkes from a recipe by WhatJewWannaEat.com and paired them with sautéed flounder. I crusted the fish with potato pancake mix. The mix gave it a nice light crust and seasoned the fish just right. The pancakes pair well with sour cream or a soy sauce dipping sauce. The whole meal was Kosher for Passover.
