Shakshouka From the Fridge
I'm always proud when I can throw together a tasty meal with ingredients I find in my refrigerator. The base was the last half of a jar of Mario Batali tomato basil sauce in a sauté pan. I added a little olive oil, za'atar, and a squirt of sriracha. Then, I stirred in some mixed olives chopped up, a medium chopped fresh tomato, and the minced bottom halves of two green onions. I brought it to bubbling. Three eggs were dropped in and poached (covered) at low heat. Garnish was the top of the green onions, chopped. I drank some English breakfast tea and wiped out the bowl with rye toast.
