Migas Matzah Brei

Last night of Passover for Jews in Israel and for Reform Jews. Great night for making Matzah Brei. We just were in Texas, so I thought I'd make an homage: Migas Matzah Brei.

So, first I sauteed in butter some chopped tomato, chopped bell pepper, chopped onion, and chopped jalapeno. When they had browned/softened a little I mixed them up together.

I beat a couple of eggs in a bowl, and salted & peppered them. Into that, I mixed a couple broken-up matzahs, softened in hot water, which was mostly squeezed out. I poured the mixture over the sauteed vegetables in the pan. I spread the egg mix over the veggies, and ran the pan under the r for a couple of minutes to dry out the top.

After the pan was taken out from the broiler, I flipped the mix over like a pancake, shredded cheese over the top, and ran it under the broiler for a couple of minutes to melt and brown the cheese. I sprinkled over the top the browned bits from the bottom of the pan.

It made a pretty tasty Hebraio-TexMex meal for my last night of Passover.
