Mexican Wedding Cookies


We have folks coming over on Wednesday evening, so my wife asked me to make Mexican Wedding Cookies according to the recipe on Hilah Cooking. I made one change for hald the double batch -- I rolled it in Ghiradelli Double Chocolate Hot Cocoa powder. Here are photos of the whole baking process I went through.

Well, we went 20 hours without electricity, i.e., no heat or power for the TV and fridge. Got it back at dinner time on Thursday, and we threw out the perishables. In the mean time, the garage door stopped working and we had to have the spring replaced.

Then, that same Thursday night on his way home, our son's car threw a wheel off. The service station hadn't tightened the lug nuts properly. He stopped okay and wasn't hurt, but by the time we got him home it was almost 3:00 a.m. The service station is paying for all the repairs and a rental car, and it is supposed to be fixed by tomorrow (Tuesday).

It's a balmy 39° F here in Northern Virginia, but still a good day for something warming. The instant kimchi ramen is doing that, even making my nose run; but it looked sad, so I added peas and a chopped-up slice of roast beef, and poached an egg in it.

What's for breakfast @ 9° F?

It was 9° F here in Northern Virginia (the South?) this morning. I put some Ghiradelli double chocolate powder in my coffee and blueberries & banana in my fat-free plain yogurt. Strawberry jam on my buttered rye toast. B-o-r-i-n-g! But warming.

Dinner Tonight

I cannot believe I forgot to photograph this.

For dinner tonight, I made for Marsha and me a Trader Joe's rack of lamb. Vegetable was baby spinach sauteed with garlic. Side dish was Trader Joe's giant white beans in tomato sauce (fasolia gigantes), which I served over a sauteed polenta cake. I made the polenta from scratch from Indian Head yellow . That was 20 minutes of stirring, not from instant. Hot Earl Grey tea was our beverage. For a snack later, I'll peel a honeybell tangelo.

My cooking week

We'd been getting together with friends for dinner out a lot over the weekends. We should have them over for dinner or eat at their houses. Anyway, we rebounded during the week as i made dinner for us five days in a row -- pretty good for us.

Monday, I made pot roast in the slow cooker and made maple-roasted butternut squash in the oven. We froze half of the roast and divided the remainder in two for Monday and Wednesday dinners.

Tuesday, I made sloppy joes on burger buns. We had corn with them, and an olive and pickles relish tray. We divided this recipe in half, too, and had the 2nd half on Thursday. Desert was sectioned honeybells we bought in Florida over winter break.

With the dinners, we polished off a bottle of Smoking Loon merlot.

Friday night, I made salmon patties with fried onions and grape tomatoes on the side. The vegetable was petite peas.

We're invited over to some friends' house for dinner Saturday (tonight), so I baked a loaf of egg bread in the breadmaker to bring over. Lunch was a goat cheese and tomato two-egg omelette seasoned with fresh thyme.
