Huevos Rancheros

Pretty good dinner. It's a riff on a recipe I learned on the Hilah Cooking website. I toasted a corn tortilla in the oven. On top, I spread some vegetarian refried beans. I poached an egg stovetop on a bed of Paul Newman salsa, then put the egg and salsa on the beans and tortilla. I sprinkled a little Texas Pete hot sauce and some olive oil on top, plus some grated parmigiano cheese. Iced tea to drink. Fresh bosc pear for dessert.

Belgian Dinner at Cock & Bowl

In Occoquan, VA, I was on my own, so I stopped in at the Cock & Bowl for the mussels meunière and frites Wednesday night special, plus a Stella Artois.

Blackberry Delight

We are blessed with a lot of goat cheese, but the chèvre's expiration is approaching. Today's breakfast is blackberries over goat cheese spread on toasted rye bread. Beverage, as usual, is hot coffee -- today, it's a spicy Ethiopian.

Eggs Poached in What I Found in the Pantry

I was inspired by Hilah Cooking's huevos rancheros recipe, but I made do with what was in the cupboard and the refrigerator. In the oven, I toasted until crispy a flour tortilla. I topped it with microwaved Heinz curry beans. In a sauté pan, I heated and thickened tomato basil sauce. I heated grape tomatoes in it and pushed them to the sides. I poached two eggs in the sauce, covering for a time to cook the top. I put the eggs and sauce over the curry beans on the tortilla. It was delicious! I wish I had something green to put on top, but c'est la vie.
