Would You Have This For Supper?

Nice supper of scrambled eggs with hot sauce, baby pickled beets, sweet little gherkins, pickled herring, a potato roll, and a shot of akavit.

Today's Lunch: Make a Sour Face

Pickled herring, pickled beets, sour cream, rye toast, and two poached eggs. Limonata soda.

Balls 'n' Greens

Tonight's dinner was meatballs over sautéed garlicky beet greens.

Pickled Beets

I pickled (or marinated) some roasted yellow beets to have with our tuna salad for supper. I probably also will sauté some summer squash with tomatoes. The beets are soaking at room temperature in a mix of cider vinegar, olive oil, dry mustard, shallots, sugar, and S&P.
