Herring, Egg Salad, & Matzah

For my Passover-compliant lunch, I had egg salad, pickled herring, and sliced grape tomatoes. On the side were more tomatoes and apple slices.

Making Hot Dog Stir-Fry

Hot dog stir-fry: red pepper & spinach chicken sausage, yellow bell pepper, grape tomatoes, fresh green beans, onion and garlic. Olive oil and soy sauce, too.

Tuna Salad on Rye and Relish Tray

Tuna with low-fat mayonnaisse and pickle relish on toasted rye bread. Relish assortment of celery and carrot sticks, grape tomatoes, scallions, green olives, and goat milk Gouda cheese.

Scallop Salad

Sunday supper was fried bay scallops with grape tomatoes, pea sprouts, and shaved Parmigiano-Reggiano cheese in a balsamic mustard vinaigrette. Two slices of bruschetta.
