Poached Eggs for Dinner


I made a light supper for myself tonight. Poached eggs over a split toasted potato roll, with a sprinkle of cayenne on top. I also had a banana and a glass of skim milk.

Fish Tacos


I  made fish tacos for dinner tonight.  First time I'd ever made them. My starting place was the Hilah Cooking recipe.  Being a good New Englander, I used cod for the fish. 

Changes: I didn't have anise seed, but I did have salt, freshly ground black pepper, ground cumin, and chili powder. I used a mix of peanut oil and olive oil to fry the fish sticks. The cabbage and the onion for the slaw was from the salad bar at Giant Food. I chopped a fresh jalapeno, but took out the seeds and ribs. No cilantro. Instead of mayonnaise, I used a 50/50 mix of fat-free greek yogurt and dijon mustard.  I have a meeting to go to tonight, so I washed it down with lemonade instead of beer.

The meal was easy to prepare, super delicious, and very filling and stomach warming on a very rainy day that was in the low 40 degrees outside. We definitely will make this again.

(No Photos) Steak Dinner

Ran around like crazy today, then forgot to take photos of tonight's dinner: charcoal-grilled rib steaks, roasted Brussels sprouts and garlic cloves with balsamic glaze, and baked potatoes.

Salmon Steamed Over Spinach

Tonight, I steamed a salmon fillet over spinach and onions. I stirred in kalamata olives at the end.



I heated minced garlic in olive oil over medium high heat, until it sizzled. Then, I mixed in a large chopped onion. I seasoned the onion with salt and pepper and sauteed it for five minutes, until the onion was translucent.

I mixed in six cups of seasoned spinach with a quarter cup of water drizzled on top. The salmon fillet (also seasoned) was placed on top of the spinach. I covered the saute pan and lowered the heat slightly. The recipe called for 1.5 lbs of fish, but there were only two of us, so I used 0.65 lbs.

It steamed for 15 minutes, and I checked it for doneness. I stirred a quarter cup of chopped kalamata olives into the spinach and onions, and served it up. We had chocolate-frosted (kosher for Passover) brownies for dessert.


My wife and I both agreed it was delicious. Maybe, I'd cut back on the amount of onion next time.

Chicken Schnitzel

Matzoh meal crusted chicken cutlets for the 3rd night of Passover 2012. We topped it with tomato sauce and served roasted carrots & parsnips on the side. Real sugar Pepsi to drink!
