Shrimp, Peppers, & Rice

I made Carolina golden rice in the rice cooker. The shrimp was marinated in lime, garlic, and oil, with cumin and oregano. Sautéed onions and bell peppers; then, added the shrimp to be sautéed. Delicious with iced tea!

Today's Lunch: Make a Sour Face

Pickled herring, pickled beets, sour cream, rye toast, and two poached eggs. Limonata soda.

Meatloaf!

What makes dinner good? Meatloaf!

Two pounds of lean ground beef. Two large eggs. A heaping cup of freshly ground breadcrumbs from farmers market sourdough bread. A quarter cup of good Temari soy sauce. A third of a cup of minced parsley from my herb garden. A teaspoon of minced thyme from the same garden. A cup of minced onion from the farm market. A teaspoon of minced garlic and a half teaspoon of black pepper. Made it into a loaf and smeared it with a half cup of ketchup. Baked at 350° F for an hour or so.

On the side was summer squash sautéed with onion and basil; and canned baked beans; and an assortment of olives. Iced tea to drink.

Bethany Beach, Delaware

We spent this past week at Bethany Beach, Delaware. My wife is an expert travel planner and she booked us a terrific condo at Sea Colony, right on the Atlantic Ocean beach. We brought her 90+ year old Mom, who lives in an independent living apartment near us. 


I'm not much of a beach or pool person, although my wife and I took some strolls together on the beach and I sat by the pool one day. She and her Mom did the beach and sunning thing, while I sat out on the condo balcony, reading and surfing the Web on my iPad.


I'm pretty proud that we didn't go out to dinner every night. We decided to do an every other night thing. The at-home nights I cooked. My trusty Lodge cast iron skillet got a very nice workout through the week. It made scrambled eggs in the morning, shrimp with vegetables and pasta in the evening, as well as franks and beans and other light fare. I cooked up shrimp and corn salad the last day for lunch.


Sunday, we take a leap on the Labor Day traffic and drive home. Monday, we've been invited to our friends' home for a cookout. We're going to pick up some fruit at a Delmarva farm stand to bring to the BBQ.
