Jazz Up That Soup!

I have a cold. No energy to made homemade chicken soup. So, what to do? I heated up some Progresso chicken noodle soup, but that's so boring. Why not add a couple of pinches of Herbes de Provence I bought in France? Sure! And some fresh garlic slivers? Yes! And a poached egg? Of course! I feel better already!

Rice Dish for One

My son got a job in California. My wife is driving with him from Virginia cross-country to the San Francisco Bay area. So, I'm by myself, cooking meals for one. Tonight's dinner was a small bowl of brown rice, topped by sauteed spinach, garlic, and mushrooms, and further topped by a soft poached egg. Light and delicious.

Herring in wine sauce, poached eggs with za'atar, rye toast, kalamata olives, carrots, and iced tea.
