Steak Dinner

I salted the steak with a little kosher salt and ground black pepper on it. The steak was seared on one side in a cast iron pan in some olive oil at high heat for 3 minutes.
I flipped the steak over, then added some lightly oiled mixed mushrooms to the pan.
The pan was put into a 375º F oven for 12 minutes.
When I took the pan out of the oven, I removed the steak and mushrooms to a tented plate to rest, then deglazed the pan with riesling and added a pat of unsalted butter.
The steak and mushrooms were put back into the pan and coated in the sauce.
The steak was taken from the pan and plated. The mushrooms were tossed with some soba I'd cooked then added to the plate.
To drink, I had a mug of shandy. For dessert, I had a bowl of fresh cherries. I had it outside on the screen porch and listened to "Abbey Road."

Pasta Frittata
Leftover rigatoni with chicken and mushrooms, mixed with eggs, grated parmigiano and pecorino, s&p, and fresh basil and thyme. Heated medium high on the stove in an olive-oiled sauté pan for 5 mins. Then, more cheese grated on top with some torn basil leaves and a sprinkle of EVOO. Thrown into a 350° F oven for 3 minutes, upped to 500° F for two minutes.

Rice Dish for One
My son got a job in California. My wife is driving with him from Virginia cross-country to the San Francisco Bay area. So, I'm by myself, cooking meals for one. Tonight's dinner was a small bowl of brown rice, topped by sauteed spinach, garlic, and mushrooms, and further topped by a soft poached egg. Light and delicious.

Fish Dinner
Tonight's dinner was masa harinha-crusted sautéed Dover sole covered with wild mushrooms and onions. Pan deglazed with Savignon blanc. Kimchi and tomatoes on the side. Sauvignon blanc to drink.
